Foodborne Pathogens

The Biggest Risks to Food Safety.

Food safety is a critical public health concern worldwide, and foodborne pathogens remain one of the biggest threats to the safety and quality of food products. These harmful microorganisms can contaminate food at any point in the food supply chain, from raw material sourcing and processing to storage, transportation, and consumption. Foodborne illnesses caused by pathogenic microorganisms result in millions of cases of illness, hospitalizations, and deaths globally each year, emphasizing the need for robust food safety management systems.

Foodborne pathogens are harmful microorganisms that contaminate food and cause foodborne illnesses in humans. These pathogens include bacteria, fungi, parasites, and viruses. They can enter food during production, processing, transportation and storage. Inadequate hygiene practices, improper cooking, poor storage conditions, and cross-contamination are among the major factors contributing to pathogen contamination.

Major Foodborne Pathogens

1.Escherichia coli (E. coli)
Pathogenic strains of E. coli, particularly E. coli O157:H7 mainly contaminate uncooked meat, raw milk, and fresh vegetables. Severe infections may lead to kidney failure and haemolytic uremic syndrome.

2.Salmonella spp.
Salmonella is one of the most common foodborne pathogens mainly associated with poultry, eggs, meat, milk, products. Salmonella Infection can cause fever, diarrhoea, and abdominal cramps.

3. Listeria monocytogenes
Listeria is a significant foodborne pathogen and is capable of growing at refrigeration temperatures. It is commonly found in ready-to-eat foods, dairy products, and processed meats.

4. Staphylococcus aureus
This pathogen produces heat-stable toxins that can remain active even after cooking. Foods handled improperly and stored at unsafe temperatures are especially susceptible to contamination.

5. Campylobacter spp.
mostly associated with raw poultry, unpasteurized milk, and contaminated water, Campylobacter is a leading cause of bacterial gastroenteritis worldwide.

6.Vibrio spp
Vibrio species such as Vibrio cholera, Vibrio parahaemolyticus and Vibrio vulnificus are the significant concerns in seafood safety. These bacteria are commonly found in marine environments and can contaminate seafood, leading to gastrointestinal illness, septicaemia, or cholera in humans.

Shigella Species

Shigella causes shigellosis, a highly infectious intestinal disease characterized by diarrhea, fever, and abdominal cramps. Contamination is usually linked to poor hygiene, contaminated water, and improper food handling practices.

Norovirus

Norovirus is a highly contagious foodborne pathogen transmitted through contaminated food, water, and food handlers. It is a major cause of foodborne outbreaks in restaurants and catering establishments.

Regular testing of raw materials, in-process samples, finished products, water, and surfaces helps verify food safety controls and regulatory compliance.

The Role of Laboratories in Food Safety

Accredited testing laboratories play a vital role in identifying and monitoring foodborne pathogens. Microbiological testing helps food businesses verify product safety, validate sanitation programs, investigate contamination incidents, and comply with regulatory requirements. Early detection of pathogens supports timely corrective actions and reduces the risk of foodborne outbreaks.
